The unique terroir of Borovitza in North Western Bulgaria had again produced a wine with a difference. Ripe and fleshy, full bodied beast, more on the lines of Carneros rather than Burgundy. Yet, despite all that ripeness and juiciness, a streak of cool minerality wrapped in fresh crisp acidity, gives the game away. The substantial amount of chalk in the subsoil had left its distinctive mark on the palate behind the dollops of of ripe black morelino cherries. A touch of crashed black peppercorns on the finish completes the palate. Great with salmon and poultry.
