A Bordeaux blend of Cabernet, Merlot and Cabernet Franc crafted in the cult Bulgarian winery Borovitza. From very old vines scattered in the Danubian plains a minute quantity of grapes trickled black concentrated juice. It took about 60 months in old Bulgarian oak barrels and the philosophy of the Franciscan Monks applied by two Bulgarian wine-maker mavericks before it transformed into a rather complex, silky woven fine and elegant wine. Black forest fruits mingle with smoke, cedar notes, black truffle notes, bacon and roasted nuts. Very complex, it is best on its own or with a slow roasted furred game or a medium rare steak. Stilton and other smelly cheeses also spring to mind. What a treat!
